For 400 years Puerto Rico was a Spanish colony until it was invaded by the U.S. in 1898 during the Spanish-American War. With the Arabica bean introduced to the island in 1736, coffee had been a major industry there in the 1800’s, and production had soared in the central mountainous area with a growing market abroad. Unfortunately, when two hurricanes hit the island in 1899, coffee and sugar plantations were devastated. Farmers were forced to take loans so predatory that in 10 years U.S. banks and sugar companies owned the majority of Puerto Rican land.
In 1917 the Jones Act granted American citizenship to Puerto Ricans. Shortly after, 18,000 Puerto Ricans fought for the U.S. in World War I, and 65,000 served in World War II. The Great Depression caused a major migration of Puerto Ricans to the U.S. mainland in search of employment, particularly to New York City. A hurricane in 1932 also delivered a blow to crops in what had been an agriculturally prosperous period due to strong sugar and tobacco production.
In 1948 Congress passed an act to allow Puerto Ricans to elect their own governor. In 1952, Puerto Rico officially became a U.S. commonwealth, which allowed it to create its own constitution and granted it other powers of self-government.
In 1950, with a push to industrialize underfoot, the U.S. government and Puerto Rico launched Operation Bootstrap (Section 936), which gave tax breaks to mainland businesses to encourage relocating their production facilities to Puerto Rico rather than overseas, particularly pharmaceutical companies. At its peak, the island was home to 89 drug manufacturing plants. The initiative was generally a success for the island, but in 1996 President Bill Clinton signed a law that would phase it out over 10 years, removing the multibillion-dollar incentive for companies to operate there.
By 2006 the manufacturing companies were largely gone, and the global economy would soon be in a recession. Puerto Rico started issuing massive amounts of municipal bonds, essentially borrowing money to pay its bills. To sweeten the deal, the U.S. Congress allowed buyers of the bonds to be triple tax exempt: they didn’t have to pay local, state, or federal taxes on the bonds. Before long, the Puerto Rican government found themselves $70 billion in debt. However, due to a small amendment to a U.S. law in 1984, Puerto Rico cannot declare bankruptcy.
There has been much debate over whether Puerto Rico should become a U.S. state, but a bill proposing it has never made it to Congress. Meanwhile, benefits of U.S. statehood include an additional $10 billion per year in federal funds, the right to vote in presidential elections, higher Social Security and Medicare benefits, and a right for its government agencies and municipalities to file for bankruptcy.
Independent coffee farms still exist on the island, and Atilano is proud to soon be debuting a new coffee blend partially sourced from Puerto Rico, where our founder was born and raised.
]]>Originating from the 1960’s Dominican Republic countryside, bachata rooted from disenfranchised communities living at the margins of society due to Rafael Trujillo’s 30-year dictatorship. Bachata was far from representing the image of the modern society that Trujillo worked so hard to project. Recurring themes of bachata involved love, lust, despair, crime, and vulgarity—themes that were widely part of life on the margins—and, as with many dictatorships, Trujillo’s regime came with intense censorship laws.
This condemnation led to a deeply rooted social stigma against bachata and what it represented, even after Trujillo’s death in 1961. Sadly the stigma continued well into the 1970’s and bachata held such negative social connotations that the word was even used as an insult for some time. Despite such harsh social perceptions, the art form continued to thrive in poorer neighborhoods, serving as expression for the voiceless. The art revealed social injustices, poverty, and the overall hardships of the lower classes.
By the 1980’s, bachata had finally made it to mainstream media and continued its evolution. By the 1990’s bachata was more modernized and started incorporating electronic components and altering its tempo. The first “pop-bachata” artists came about, and further evolved to what it is today, representing the vast cultural diversity of the Dominican Republic and serving as a reminder of the social evolution of the country.
As of December 2019, UNESCO inscribed Dominican Bachata in the Representative List of Intangible Cultural Heritage of Humanity. Considering that bachata was once rejected, denounced, and used as an insult, being honored by UNESCO exhibits the cultural importance and social evolution of this signature Dominican art form.

The Arabica bean has a superior taste and can be curated into a wide variety of flavors while the Robusta bean has a harsher flavor and is often used in commodity coffee.
Just because the beans may look alike on the outside after being roasted, there are real contrasts between the two strains of beans. The Arabica's range of flavors makes it a great way to tailor multiple variations of the product to satisfy even the pickiest of coffee drinkers. It has a soft, sweet taste with notes of berries and sugar, and those levels can vary highly depending on how it is processed and roasted.
The Arabica plant has less caffeine than the Robusta, but this is actually a positive trait. Caffeine carries a bitter taste similar to burnt tires or rubber. The lower amount of caffeine is why Arabica beans have a lighter and sweeter taste than Robusta and why it is typically preferred by discerning coffee drinkers.
Arabica beans tend to be pricier as the plant takes longer to grow than Robusta, and in very specific conditions. You will always find Arabica displayed on supermarket shelves, but you won’t find it in instant or inexpensive coffee brand offerings.
Arabica is by far the predominant coffee plant being grown in Colombia and most of Latin America.
There is no contest between the two different beans for us: Arabica is the preferable and obvious choice when it comes to better coffee for you.

Your grind size that is
If you’ve ever looked at your new coffee grinder and slightly panicked, asking “Why are there over 15 settings and what do they mean”?
We’ve got you covered.
There are a handful of factors that can mess up the taste of your incredible coffee once you've gotten it home:

We want to expand upon why grind size matters. The main idea behind grind size is based on how long your coffee is in contact with water during the brewing process.
Coarse Grind⠀
A coarse grind is typical for a longer brew such as French press or coffee press. This longer brewing time (usually about four minutes) in partnership with the larger surface area of the coarse grind, allows the water more time and space from which to extract all of the goodness out of the coffee.
Middle-of-the-Grind-Spectrum: Drip et al
Drip coffee is usually used when you’re making more than just one cup of coffee, usually for a group or maybe just for a very tired morning.
You may have a conical filter or flat-bottom filter. Either way, you've got a relatively broad bed of grounds with water coming in contact through a spray head fitting. Volume comes into play here.
There is definitely room to tweak as play around with your grinder until you find something that really works for your taste buds. We can tell you all about the specifics of the grinding process but you’re the one drinking the coffee so find what works for you.
